Apricot Jam Iced Tea

Some afternoons call for something to sip on the porch while everyone else drifts in from wherever they've been, and this is that drink. Black tea and New Canaan Farms Apricot Jam steep together, then get poured straight over ice, no citrus, no syrup, nothing else needed. The jam does double duty here, melting in for real fruit flavor and giving the glass its own warm, sunset color. Simple enough to make a pitcher at a time when people start showing up.

Ingredients

  • 5 tablespoons black tea, loose or 5 tea bags
  • 7 cups water, heated to 200°F
  • 1 cup New Canaan Farms Old Austin Apricot Jam
  • 4 cups ice, for serving
  • 6 fresh or dried apricot slices, for garnish

Serve With: A sprig of mint, or a splash of sparkling water for a lighter version.

Directions

  1. In a large heatproof bowl or pot, combine the black tea with the hot water. Stir in the apricot jam while the water is still hot, until fully dissolved.
  2. Let the tea steep for 4 to 5 minutes, then strain out the loose tea or remove the tea bags.
  3. Let the concentrate cool to room temperature, then refrigerate until fully chilled, at least 1 hour.
  4. Pour the chilled concentrate into a pitcher. Serve over ice by the glass, garnished with an apricot slice and enjoy!
