Make-Ahead Breakfast Casserole
This breakfast casserole comes together the night before, so the morning is free for coffee and whoever is gathered around the table. Eggs, hash browns, sausage, and sharp cheddar bake together with a full jar of our Fire-Roasted Cantina Salsa, which brings smoky, roasted flavor to every bite. Slide it into the oven when the first person wanders into the kitchen. It's made for holiday mornings, houseguests, and a Sunday brunch with the whole family.

Prep Time: 20 minutes, plus overnight chilling if making ahead
Cook Time: 40-45 minutes
Ingredients
- 12 large eggs
- ¾ cup milk
- 1 lb. frozen hash browns, thawed
- 12 oz. breakfast sausage, crumbled and cooked
- 1½ cups shredded sharp cheddar
- 1 jar New Canaan Farms Fire-Roasted Cantina Salsa
- Salt and black pepper, to taste
Serve With: Fresh fruit, warm tortillas, or extra Fire-Roasted Cantina Salsa on the side.
Directions
- In a large bowl, whisk together the eggs and milk.
- Gently stir in the hash browns, cooked sausage, cheddar, and Fire-Roasted Cantina Salsa. Season with salt and pepper.
- Spoon the mixture into a greased baking dish. Cover and refrigerate overnight.
- When you're ready to bake, preheat the oven to 375°F.
- Bake uncovered for 40–45 minutes, until the center is set and the top is lightly golden.
- Let the casserole rest for about 5 minutes before serving.
