Ingredients
- 3 pounds red potatoes, cut into 1-inch pieces
- Kosher salt and freshly ground black pepper, to taste
- 1 cup mayonnaise
- ¼ cup sweet relish
- 1 tablespoon yellow mustard
- 1-2 tablespoons New Canaan Farms Amish Dill Seasoning
- 6 hard-boiled eggs, peeled and diced
- 2 celery stalks, finely chopped (optional)
- Sweet paprika, for garnish

Directions
- Place the potatoes in a large pot and add 1 tablespoon of kosher salt. Cover with about 1 inch of cold water and bring to a boil over high heat. Cook until just fork-tender, about 15–20 minutes, being careful not to overcook. Drain and set aside to cool slightly.
- In a large bowl, whisk together the mayonnaise, sweet relish, yellow mustard, and New Canaan Farms Amish Dill Seasoning until smooth and well combined.
- Add the slightly cooled potatoes to the bowl along with the diced eggs and chopped celery, if using. Gently fold everything together until evenly coated, taking care to keep the potatoes intact.
- Taste and adjust seasoning with additional salt and freshly ground black pepper as needed.
- Cover and refrigerate for at least 2 hours, or up to overnight, to allow the flavors to develop. Before serving, finish with a light sprinkle of paprika.
