Tejas BBQ Carnitas

Ingredients
- 4–5 lb pork butt or pork shoulder
- 1 packet New Canaan Farms Chuckwagon Chile & Coffee Rub or Southwest Chipotle Rub
- 1 large onion, diced
- 2 cups New Canaan Farms Tejas Grilling & BBQ Sauce
- Salt and freshly ground black pepper, to taste
Serve With: Warm corn or flour tortillas, diced onion, cilantro, fresh tomato, lime wedges, avocado, or pickled onions.
Directions
- Pat the pork dry with paper towels and season generously on all sides with the spice rub, pressing it into the surface of the meat.
- Place the pork into a large slow cooker and scatter the diced onion around it.
- Cover and cook on low for 8 hours or high for 4–5 hours, until the pork is tender and easily pulls apart with a fork.
- Transfer the pork to a cutting board and shred using two forks. Carefully drain most of the fat from the slow cooker, leaving behind the flavorful cooking juices.
- Return the shredded pork to the slow cooker and stir in the Tejas Grilling & BBQ Sauce until everything is well coated. Taste and season with salt and pepper if needed.
- Preheat the oven broiler. Spread the shredded pork onto a large baking sheet in an even layer. Broil for 3–5 minutes, or until the edges begin to crisp and caramelize.
