Pulled Pork Sliders with Tejas BBQ Sauce

Ingredients
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons smoked paprika
- 2 teaspoons kosher salt, plus more to taste
- 1 teaspoon freshly ground black pepper, plus more to taste
- 3-4 pounds boneless pork shoulder, trimmed and cut into 4 large chunks
- 2 tablespoons vegetable oil
- 1 yellow onion, chopped
- 1 (12 ounce) can dark soda (such as cola or root beer)
- ¾-1½ cups New Canaan Farms Tejas BBQ Sauce
- 12-16 slider buns

Directions
- In a large bowl, combine the garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. Add the pork and turn to coat evenly in the seasoning.
- Set an electric pressure cooker to sauté and add the vegetable oil. Once warm, sear the pork in batches, browning on both sides for about 2 minutes per side, until a light crust forms.
- Add the chopped onion to the pot. Pour in the soda and use a wooden spoon to scrape up any browned bits from the bottom.
- Seal the lid and cook on high pressure for 1 hour. Allow the pressure to release naturally for 15 minutes before opening.
- Transfer the pork and onions to a large bowl. Using two forks, shred the meat into bite-sized pieces.
- Add ¾ cup of New Canaan Farms Tejas BBQ Sauce, along with a few spoonfuls of the cooking liquid, to moisten. Toss gently to combine, adding more sauce as desired. Taste and adjust with salt, pepper, or a dash of hot sauce if you like a bit of heat.
- Pile the pulled pork onto soft slider buns and serve warm with extra sauce on the side.
