Hill Country Skirt Steak
This skirt steak centers on the bold, smoky depth of our Wood-Fired Steak Rub. Kept dry and savory, the seasoning forms a deeply caramelized crust under high heat while allowing the natural flavor of the beef to shine. A light coating of olive oil helps the spices adhere, and an optional touch of brown sugar enhances the char without overpowering the rub. The result is a steakhouse-style finish with clean, concentrated flavor and a perfectly tender bite.

Ingredients
- 2 pounds skirt steak, trimmed
- 1 TBSP. olive oil
- 1½ TBSP. New Canaan Farms Wood-Fired Steak Rub
- 1 tsp. light brown sugar (optional, for enhanced crust)
- Sea salt, if needed
Serve With: Grilled vegetables, roasted potatoes, warm tortillas, or a simple arugula salad.
Directions
- Pat the skirt steak dry with paper towels to remove excess moisture.
- Rub both sides lightly with olive oil. Evenly press the Wood-Fired Steak Rub over the meat, adding the brown sugar if using. Cover and refrigerate for 1 hour to allow the flavors to develop. Remove from the refrigerator 30 minutes before cooking to bring to room temperature.
- Preheat the broiler and position a rack 4 to 6 inches from the heat source. Line a sheet pan with foil.
- Place the steak on the prepared pan and season lightly with sea salt if needed. Broil for 3 to 4 minutes per side for medium-rare, depending on thickness and broiler strength.
- Transfer to a cutting board and let rest for 10 minutes. Slice thinly against the grain before serving.
