Garden Salad with Balsamic Maple Dijon Dressing
A simple side salad that goes with just about anything on the table. Crisp romaine, shredded carrots, cucumber, and cherry tomatoes get tossed with a quick dressing built on our Balsamic Dijon Mustard, a little maple syrup, and good olive oil. It comes together in the time it takes everything else to finish cooking, and it's just as good alongside a weeknight dinner as it is on a bigger spread.

Ingredients
For the Salad
- 2 heads romaine (about 6–8 cups), chopped
- ¾ cup croutons
- ½ cup shredded carrots
- ½ cucumber, thinly sliced
- ¼ red onion, sliced
- A handful of cherry tomatoes, halved
For the Balsamic Maple Dijon Dressing
- ¼ cup New Canaan Farms Balsamic Dijon Mustard
- ¼ cup extra-virgin olive oil
- ¼ cup pure maple syrup
- ¼ cup water
- Salt and freshly ground black pepper, to taste
Serve With: Your favorite weeknight dinner
Directions
- In a small bowl or glass jar, whisk together the Balsamic Dijon Mustard, olive oil, maple syrup, and water until smooth. Season with salt and pepper to taste.
- In a large serving bowl, add the romaine and top with the carrots, red onion, cucumber, tomatoes, and croutons.
- Drizzle the dressing over the top and toss to combine. Serve immediately.
Other variations to try: Add crumbled feta or goat cheese, or swap the croutons for toasted pecans for a little crunch.
