Serves: 18 tarts
Prep Time: 15 minutes (plus thawing time)
Cook Time: 15–20 minutes

Ingredients

Serve With: Coffee, Rose Hibiscus tea, or a dessert board with fresh fruit and whipped cream.

Directions

  1. Preheat the oven to 425°F. Lightly flour a work surface and roll each puff pastry sheet into a 10x10-inch square. Cut each sheet into 9 equal squares.
  2. Prick each square lightly with a fork to prevent over-puffing.
  3. Place 1 teaspoon of New Canaan Farms jam in the center of each square. Brush the edges with egg wash, then bring the corners up to the center, pinching and twisting gently to seal.
  4. Arrange the tarts on a baking sheet. Brush the tops with the remaining egg wash and sprinkle with turbinado sugar.
  5. Bake for 15–20 minutes, or until the pastry is deeply golden. If any corners loosen while baking, gently press them back toward the center while the tarts are still warm.
  6. Let cool for at least 30 minutes before serving to allow the jam to set.
