Spicy Roasted Chickpeas
These chickpeas are one of those snacks that feel a little too good to be true — simple to make, healthy, and downright addictive. Tossed with olive oil and our Cajun Swamp Root Dip mix, they roast up crisp on the outside and tender in the middle. Perfect for pre-dinner nibbles, cocktail hour, or packing into a bag for an on-the-go snack.

Ingredients
· 1 can chickpeas, drained and rinsed
· 1–2 Tbsp olive oil
· 1 packet New Canaan Farms Cajun Swamp Root Dip
Serve With: Wine or your favorite cocktail
Directions
1. Preheat the oven to 400°F. Line a baking tray with parchment.
2. Rinse chickpeas, then spread out and blot dry with a paper towel. Let them air dry for a few minutes.
3. Place chickpeas in a bowl and toss with 1 tbsp olive oil (add a little more if needed).
4. Spread evenly on the baking tray and roast for 20–30 minutes, shaking the pan every 10 minutes.
5. Remove when golden, crisp on the outside, and soft inside.
6. Return chickpeas to the bowl and toss immediately with Cajun Swamp Root Dip mix.
7. Serve warm while crispy. As they cool, they’ll turn chewy but still delicious. Store in a zip-top bag to re-shake spices before serving.
Other Variations to try…Use Tex-Mex Habanero Dip mix for a bolder, spicier kick. Try Amish Garden Dill Dip mix for a milder, herby snack. Mix with Parmesan for a savory, cheesy twist.
