Salmon Ceviche Salad

This light and refreshing salad is a favorite when I want something that feels a little special but takes almost no effort. Canned salmon, lime juice, fresh veggies, and a splash of our Mango Habanero or Ginger Citrus Sauce come together for a bright, zesty dish that’s as good for a group appetizer as it is for a simple weeknight meal.

Ingredients

·         1 can salmon

·         Juice of 2 limes

·         10 mini tomatoes, diced

·         ½ red onion, diced

·         ¼ cup cucumber, diced

·         1 avocado, diced (optional)

·         ½–1 jalapeño, diced

·         ¼ cup New Canaan Farms Mango Habanero Sauce or Ginger Citrus Sauce

·         2 sprigs fresh cilantro, chopped

·         Salt and pepper, to taste

Serve With: Toasted pita bread or tortilla chips

Directions

1.    In a mixing bowl, combine all ingredients. Season to taste with salt and pepper.

2.    Chill at least 1 hour before serving.

3.    Transfer to a serving bowl and surround with accompaniments of your choice. For a fun presentation, mold mixture into a small bowl and invert onto a plate.

4.    Try Ginger Citrus Sauce for an Asian-inspired variation and serve with crispy prawn crackers or wontons.
