Rustic Peach Strudel

Our strudel might just be the easiest dessert trick we know. A little folding, a spoonful of jam, and into the oven it goes. In no time at all you’ve got a warm, peachy dessert that looks impressive and tastes even better. The best part is that it’s meant to look a little rustic, golden pastry, bubbling jam, and a filling that feels homemade through and through.

Ingredients

·         1 sheet puff pastry, thawed

·         1 cup freshly sliced or thawed peaches

·         1 jar New Canaan Farms Peach Pecan & Amaretto Jam

·         ¼ cup brown sugar

·         ½ cup halved pecans

·         1 egg, beaten (for basting)

·         Powdered sugar, for dusting (optional)

Serve With: Vanilla ice cream or whipped cream

Directions

1.    Preheat the oven to 350°F and line a baking tray with parchment paper.

2.    On a lightly floured surface, roll out puff pastry. Place on prepared baking sheet and spread a thin layer of jam down the center third of the pastry.

3.    With a sharp knife, cut diagonal strips into the pastry along each side.

4.    In a small saucepan, combine 1 cup jam with peaches, pecans, and brown sugar. Heat gently for 2–3 minutes, stirring, until slightly caramelized. Let cool for 5 minutes.

5.    Spoon peach mixture down the center of the pastry. Fold in the ends, then weave the strips across the top, tucking in edges to seal.

6.    Brush with beaten egg and bake for 20–25 minutes, until puffed and golden brown.

7.    Cool slightly, dust with powdered sugar if desired, and serve warm with ice cream or whipped cream.

Other Variations to try…Swap pecans for walnuts for a different nutty flavor. Try with Apricot Jam for a more delicate twist.
