Refeshing Summer Salad
This salad is all about celebrating summer produce at its best. Juicy peaches, ripe tomatoes, and fresh basil come together with feta, pecans, and a bright dressing made with our Mango Habanero or Ginger Citrus Sauce. It’s colorful, refreshing, and easy enough to pull together in minutes, perfect for weeknight dinners, potlucks, or a light lunch with friends.

Ingredients
· ¼ cup New Canaan Farms Mango Habanero Sauce or Ginger Citrus Sauce
· ¼ cup balsamic vinegar
· ¼ cup extra virgin olive oil
· 5 tomatoes, cut into wedges
· 1 cup red onion, thinly sliced
· 5–6 ripe peaches, peeled and sliced into wedges
· 1 cup crumbled feta cheese
· 1 cup pecan halves (toasted or caramelized)
· ½ cup pitted black olives (optional)
· Fresh basil leaves, to garnish
Serve With: Toasted ciabatta
Directions
1. Whisk together Mango Habanero Sauce, balsamic vinegar, and olive oil. Pour into the base of a serving bowl.
2. Layer in tomatoes and onion, then peaches, feta, pecans, and olives if using.
3. Gently toss salad, adding basil leaves last so they stay fresh.
4. Serve immediately with warm bread.
Other Variations to try…Swap peaches for raspberries (or add both for extra fruitiness). Try Ginger Citrus Sauce with pineapple and lime for a tropical twist.
