Pepper Bacon Cornbread

Cornbread has a way of making any meal feel a little more comforting, and this version is extra special. Our Pepper Bacon Jam adds smoky-sweet flavor, while cheddar, green onions, and crispy bacon make it hearty and full of character. It’s just as good alongside a midweek dinner as it is served warm with cream cheese for an afternoon snack.

Ingredients

·         1 box cornbread mix

·         ¼ cup New Canaan Farms Pepper Bacon Jam

·         1 cup shredded cheddar cheese

·         ¼ cup green onions, sliced

·         2 slices bacon, cooked and crumbled

Serve With: Cream cheese or sour cream for a snack or appetizer. Also makes a great side to any meal.

Directions

1.    Preheat the oven to 400°F. Grease an 8-inch square baking pan.

2.    Prepare cornbread mix according to package directions.

3.    Gently warm Pepper Bacon Jam, then stir into the batter along with cheese, onions, and bacon. Mix to combine.

4.    Bake according to package directions, adding a few extra minutes as needed, until golden and a toothpick inserted in the center comes out clean.

5.    Cool slightly before cutting into squares. Serve warm if you can.
