One-Pan Turkey & Rice Skillet
This is a go-to when dinner is needed on the table fast. A little ground turkey, some leftover rice, and a scoop of our Fire Roasted Cantina Salsa, and suddenly you’ve got a healthy, hearty meal that tastes like you put in way more effort than you did. It’s simple and flexible, and one of those recipes that always gets the job done on busy nights.

Ingredients
· 1 red pepper and 1 yellow pepper, diced
· 1 lb ground turkey or chicken
· 2 cups leftover rice (or substitute freshly cooked)
· 1 cup frozen or canned corn
· 1 cup New Canaan Farms Fire Roasted Cantina Salsa
· Small amount of water, as needed
· Optional add-ins: canned black beans, extra spices, or other frozen vegetables
Serve With: Steamed vegetables or a green salad
Directions
1. Heat a little oil in a skillet over medium heat. Add peppers and ground turkey (or chicken), breaking the meat into small pieces as it cooks. Cook until browned, about 5–7 minutes.
2. Stir in the rice, corn, and salsa.
3. Bring to a gentle simmer and cook for 5 minutes, until the turkey is cooked through and the mixture is hot. Add a splash of water if it looks too dry.
4. Serve warm with steamed vegetables or a fresh green salad.
Other Variations to try: Use Demon Salsa for a fiery kick. Try Black Bean & Corn Salsa for a heartier, ingredient-rich version.
