Mango Habanero Shrimp Salad

Not all salads are created equal, and this one proves it. Sweet melon, crisp peppers, and tender shrimp come together in just minutes, but it’s the Mango Habanero Sauce that makes it unforgettable — a little sweet, a little spicy, and a whole lot of flavor. It’s quick enough to toss together on a busy day, but pretty enough to set out when you’ve got company.

Ingredients

·         1 (10 oz) bag spring mix salad greens

·         ½ cup diced cantaloupe

·         1 red pepper, diced

·         1 cup cooked shrimp (warm or cold)

·         ¼ cup New Canaan Farms Mango Habanero Sauce

·         ⅓ cup crumbled feta cheese

Serve With: Warm bread or toasted pita

Directions

1.    In a large bowl, combine salad greens, cantaloupe, red pepper, and shrimp.

2.    Toss with Mango Habanero Sauce (or Ginger Citrus Sauce) until evenly coated.

3.    Sprinkle with feta cheese and serve immediately.

Other Variations to try…Mix Old Austin Apricot Jam with soy sauce for a sweet-and-spicy dressing. Use Raspberry Chipotle Sauce as a bold dressing for salmon or roasted chicken salad.
