Healthy Apple Muffins

They’re quick to whip up, full of flavor, and a family favorite around here in Utopia.

Ingredients
· 1¼ cups all-purpose flour
· ½ cup brown sugar
· 1 tsp baking powder
· 1 tsp baking soda
· Pinch of salt
· 1 large egg
· ⅓ cup olive oil
· ½ cup plain Greek yogurt
· 1 tsp vanilla extract
· ½ jar New Canaan Farms Country Apple Butter
· Muffin cups
Serve With: A glass of milk or a hot cup of tea ☕️
Directions
1. Preheat the oven to 350°F.
2. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
3. Make a well in the center and add the egg, olive oil, yogurt, vanilla, and Country Apple Butter. Mix gently with a fork until blended.
4. Line a muffin pan with cups and spoon the batter in, filling each about two-thirds full.
5. Bake for 15 minutes, or until a muffin springs back when lightly pressed.
6. Let cool slightly and enjoy!.
