Cherry Ricotta Toast

Homemade ricotta might sound fancy, but it couldn’t be easier. With just a few ingredients and a little patience, you can make the creamiest ricotta right in your own kitchen. Spread it over toasted bread and top with our Cherry Preserves for a simple yet elegant breakfast, snack, or light meal.

Prep Time: 10 minutes
Cook Time: 1 hour (mostly draining time)

Ingredients

·         2 slices bread of your choice (sourdough, baguette, or brioche work well)

·         ½ cup New Canaan Farms Cherry Preserves

·         2 cups whole milk

·         1 cup heavy cream

·         2 tbsp lemon juice

·         ¾ tsp salt

·         Cheesecloth

Serve With: Hot coffee, iced tea, or a cool glass of wine

Directions

1.    Gently heat the milk and cream in a medium pan until it just begins to bubble.

2.    Remove from heat, stir in the lemon juice and salt, and let sit without stirring.

3.    After 3–5 minutes, the mixture will begin to curdle. Pour it through cheesecloth set in a sieve over a bowl. Allow to drain for 1 hour.

4.    When ready to serve, lightly toast the bread. Spread ricotta on top and finish with a generous spoonful of cherry preserves.

Other add-ins to try: Raspberry Jam for a bright, classic combination. Old Austin Apricot Jam topped with slivered almonds for a lighter twist. Brazos River Blackberry Jam for a rich, deep flavor.
