Cheesy Jalapeno Scones

Simple scones get a savory twist with sharp cheddar and our Sweet & Hot Jalapeños. Light, fluffy, and full of flavor, these little bites are perfect for entertaining, pairing with charcuterie, or enjoying as a cozy everyday treat.

Ingredients

·         2½ cups self-raising flour

·         Pinch of salt

·         1 tsp baking powder

·         ⅓ cup butter, cut into cubes

·         ¾ cup sharp cheddar cheese

·         ¼ cup New Canaan Farms Sweet & Hot Jalapeños, lightly chopped

·         ¾ cup whole milk

·         Squeeze of lemon juice

·         1 beaten egg, for basting

Serve With: Charcuterie and cheese plates, or as a meal accompaniment

Directions

1.    Preheat the oven to 400°F. Grease and line a baking tray with parchment paper. Place the tray in the oven to warm while you prepare the dough.

2.    In a large bowl, mix together self-raising flour, salt, and baking powder.

3.    Add the cubed butter and rub in with your fingers until the mixture looks like fine breadcrumbs. Stir in the cheese and chopped jalapeños.

4.    Warm the milk in the microwave for 30 seconds (not hot), then add a squeeze of lemon juice and set aside.

5.    Make a well in the dry mixture and pour in the milk mixture. Combine quickly with a knife until it forms a soft, sticky dough. Adjust with a little extra flour or milk if needed.

6.    Turn dough onto a floured surface, sprinkle with flour, and fold a few times until smoother. Pat into a round about 1½ inches thick.

7.    Cut out scones with a floured cutter, reshaping leftover dough as needed.

8.    Place scones on the hot baking tray, brush tops with beaten egg, and bake for about 10 minutes, until risen and golden brown.

9.    Serve warm for the best flavor.
