Berry Jam Drop Cookies
These charming jam sandwich cookies are a fun baking project for both kids and adults. With buttery shortbread-style dough and jewel-bright jam centers, they’re as pretty as they are delicious. Inspired by a French classic, this recipe is simple, playful, and easy to make with your favorite New Canaan Farms jams.
Serves: Makes 10–12 cookies
Prep Time: 10 minutes plus chilling
Cook Time: 12–15 minutes
Ingredients
· 1½ cups all-purpose flour, plus extra for dusting
· ½ cup white sugar
· 1 large egg (or 2 small eggs)
· 1 stick butter, diced and softened (use salted butter, or add a pinch of salt if using unsalted)
· A variety of New Canaan Farms jams (Fredericksburg Peach, Strawberry Almond, and East Texas Blueberry are favorites)
· Powdered sugar, for dusting
Serve With: Other seasonal or holiday treats
Directions
1. In a large bowl, mix together the sugar and flour.
2. Add the egg(s) and mix until combined.
3. Add the softened butter in small amounts, mixing after each addition. Lightly rub the butter in with your fingertips until the mixture looks like moist crumbs.
4. Bring the mixture together into a dough. Divide into 4 equal pieces and flatten into patties. Place in an airtight container and chill for at least 4 hours or overnight.
5. When ready to bake, preheat oven to 325°F. Line a baking tray with parchment paper.
6. Work with one piece of dough at a time. Roll out on a lightly floured surface to about 2–3 mm thick.
7. Cut out cookie shapes (egg shapes work well) and transfer to the prepared tray. For half of the cookies, cut out a small circle in the center using a bottle top or mini cutter.
8. Re-roll scraps and continue until all dough is used. You should have 20–24 cookies total.
9. Bake for 12–15 minutes, until the edges are just beginning to color. Remove and cool completely.
10. Spread jam over the whole cookies, then top with the cut-out “window” cookies. Dust lightly with powdered sugar before serving.
Other add-ins to try: Raspberry Jam for a rich red filling and bright flavor. Old Austin Apricot Jam for a golden “yolk” color. East Texas Blueberry Jam for a sweet, deep purple center.
