Ingredients
2 tbsp olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 jar New Canaan Farms Cilantro Salsa
3-4 cups vegetable or chicken stock
1lb ground turkey
1 can black beans
1 can white beans or pulses (cannelloni, navy, garbanzo)
1 cup cherry tomatoes, cut in half
SERVE WITH:
Sour cream, sliced avocados and peppers, salad onions, fresh cilantro, shredded cheese and New Canaan Farms Sweet & Hot Jalapeños

Directions
- Heat the olive oil in a heavy-bottomed pan, then add the diced onions and cook until they start to turn translucent
- Add in the garlic and cook for 2-3 mins
- Add the ground turkey and cook, stirring, until the color changes to brown
- Stir in the salsa, the black beans and white beans and gently combine. Allow to cook for 2 minutes
- Add in the warmed stock, stir to combine, bring to a simmer and leave to cook for 15 mins
- Add in the cherry tomatoes and cook for 5 more minutes (you could also add frozen corn of fresh spinach leaves at this point if you wish)
- Serve immediately with your chosen garnishes and fresh, warm bread
