Apricot Oat Bars

Scrumptious, easy and so versatile, these oat bars never last more than 5 minutes in our house! We've made it with every flavor, and apricot is one of our favorites!


  • 1 cup all-purpose flour
  • 1 cup old fashioned oats
  • Pinch of salt
  • 1/2 tsp baking soda
  • 1/3 cup soft brown sugar
  • 1/2 cup butter, melted
  • 3 tsp vanilla extract
  • 1 cup New Canaan Farms Old Austin Apricot Jam

  • Preheat the oven to 350° and line an 8″x8″ baking pan with parchment, bringing the paper up on two of the sides to ensure easy removal of the cooked oat jammies
  • Combine the flour, oats, salt and baking soda in a medium-sized bowl
  • In a smaller bowl, mix together the brown sugar, melted butter and vanilla extract, then add this into the dry ingredient bowl and combine well. You should have a nice moist crumbly mixture
  • Spoon 3/4 of the mixture into the baking pan and press down firmly with the back of a spoon
  • Bake in the oven for around 12 minutes, until lightly golden-brown
  • Remove from the oven and immediately spread the jam on top. The recipe calls for 1 cup, but I usually use a little more!
  • Crumble the remaining mixture on top, using your fingers, then return to the oven to cook for another 10-12 minutes
  • Remove and leave in the pan to cool for 30 minutes, then place in your fridge to cool for 30 more (this will enable you to slice into bars cleanly)
  • When ready, use the overhanging parchment to pull out the block, and slice however you wish!
  • Serve alone, or with fresh fruit and a favorite beverage

We do not accept returns of product we have shipped. However, we have a limited 15-day refund policy, which means you have 15 days after receiving your item to request a refund or exchange if the product we shipped to you is defective, damaged or not what was ordered. Please note that refund requests will need to include a description of the defective product with photos.

We will notify you once we’ve received your refund request and let you know if the refund was approved or not. If approved, you’ll be refunded on your original payment method within 10 business days. Please remember it can take some time for your bank or credit card company to process and post the refund too. If more than 15 business days have passed since we’ve approved your return, please get in touch with us so that we can help you find out what’s going on

Shipping & Refunds

For orders over $60, we offer free ground shipping to a single delivery physical address in the contiguous United States (shipping to PO Boxes incurs a $5 surcharge). For all shipping, we use the best solution available for your address, and get your order out as fast as we can. We will never take longer than 3 business days to process your order and prepare it for shipment, and if you pay the premium for overnight shipment we strive (but do not guarantee) to prepare it and put it in the carrier’s hands within 24 hours. Very occasionally, we may experience delays due to supply chain constraints or other forces beyond our control. If we are not able to ship your order within five days of receipt, we will contact you to explain the timeline and offer you a refund if you prefer. Unfortunately, we are unable to hold individual orders for future ship dates.

We also provide the ability to break your order into multiple shipments and enter individual shipping addresses for those.  Please note that the free shipping offer applies to each individual address, so you would need to spend more than the minimum in each separate shipment to qualify for free shipping.
