Perfect Mini Scones

These simple, delicious, low-sugar scones are the perfect accompaniment to all of our fabulous jams. A super quick treat, made in a flash!

Ingredients

2½ cups self-raising flour
Pinch of salt
1 tsp baking powder
1/3 cup butter, cut into cubes
3 tbsp white sugar
160g whole milk
1 tsp vanilla extract
Squeeze of lemon juice
1 beaten egg, for basting

Directions

  • Preheat the oven to 400° and grease and line a baking tray with parchment paper.
  • Spoon the self-raising flour into a large bowl with ¼ tsp salt and the baking powder, and mix well.
  • Add the cold, cubed butter, and rub in with your fingers until the mix looks like fine breadcrumbs. Stir in the sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla extract and a squeeze of lemon juice, then set aside briefly. Put your baking tray in the oven to warm.
  • Make a well in the dry mix, then add the milk liquid and combine it quickly with a regular knife – it will seem pretty wet at first but will soon solidify into a messy dough. Add additional flour or milk as needed to get the texture you like.
  • Scatter some flour onto the work surface, add dough, then sprinkle flour over the dough, your hands and the rolling pin. Fold the dough over a couple of times to make it smoother. Pat into a round about 4cm deep. Take a small cutter (I have used 2″ and 3″ and both work great) and dip it into some flour. Cut out as many scone shapes as you can, flour-ing the cutter and reshaping leftover dough as needed. I usually get 20+ mini scones from this mixture.
  • Remove the baking tray from the oven and place the scone shapes on the parchment paper. They don’t really spread so you can place them pretty close to each other.
  • Brush the tops with the beaten egg and bake for around 10 minutes, until the scones have risen and are golden brown.
  • Serve warm with any delicious New Canaan Farms jam and (if you’re feeling really decadent) whipped or clotted cream

We do not accept returns of product we have shipped. However, we have a limited 15-day refund policy, which means you have 15 days after receiving your item to request a refund or exchange if the product we shipped to you is defective, damaged or not what was ordered. Please note that refund requests will need to include a description of the defective product with photos.

We will notify you once we’ve received your refund request and let you know if the refund was approved or not. If approved, you’ll be refunded on your original payment method within 10 business days. Please remember it can take some time for your bank or credit card company to process and post the refund too. If more than 15 business days have passed since we’ve approved your return, please get in touch with us so that we can help you find out what’s going on

Shipping & Refunds

For orders over $60, we offer free ground shipping to a single delivery physical address in the contiguous United States (shipping to PO Boxes incurs a $5 surcharge). For all shipping, we use the best solution available for your address, and get your order out as fast as we can. We will never take longer than 3 business days to process your order and prepare it for shipment, and if you pay the premium for overnight shipment we strive (but do not guarantee) to prepare it and put it in the carrier’s hands within 24 hours. Very occasionally, we may experience delays due to supply chain constraints or other forces beyond our control. If we are not able to ship your order within five days of receipt, we will contact you to explain the timeline and offer you a refund if you prefer. Unfortunately, we are unable to hold individual orders for future ship dates.

We also provide the ability to break your order into multiple shipments and enter individual shipping addresses for those.  Please note that the free shipping offer applies to each individual address, so you would need to spend more than the minimum in each separate shipment to qualify for free shipping.
