Ingredients
- 3 plum tomatoes, sliced and cut in half
- 1 can refried beans
- 1 packet taco seasoning
- 1 cup New Canaan Farms Cilantro Salsa
- 1 cup shredded Mexican-mix cheese
- 1 cup guacamole, (or combine 1 large ripe avocado with the juice of ½ lime, ½ diced red onion, chopped cilantro to taste and a dash of chili powder to make your own)
- ½ cup sour cream
- Salt and pepper, to taste
SERVE WITH:
Tortilla Chips
Directions
- Mash the refried beans and taco seasoning together with a fork, and spread to cover the base of a shallow dish
- Arrange the tomato halves around the edge of the dish, propping them between the base and the sides
- Gently spoon over the New Canaan Farms Cilantro Salsa, and spread over the refried beans, leaving an edge at the sides so some of the beans are still visible
- Repeat with the cheese, then the guacamole mixture
- Spoon the sour cream into a small ziplock bag, then cut a tiny hole in the corner (if you see from the photos, mine was a little large!)
- Squeeze the bag to draw a spooky cobweb on top of the guacamole
- Serve with tortilla chips – Boo!
