Ingredients
11/2 cups buttermilk
1 large egg
4 cups all-purpose flour
3 tbsp sugar
1 tsp baking soda
1 tbsp baking powder
4 tbs cold butter
1 cup raisins

Directions
- Preheat oven to 400°
- Lightly grease a 9″ cake pan or baking sheet, or use a seasoned cast iron skillet (no need to grease)
- Whisk the buttermilk and egg together
- In a separate bowl, whisk together the flour, sugar, baking soda and baking powder
- Cut in the cold butter, and rub into the mixture with your fingers until the mixture resembles breadcrumbs
- Stir in the raisins, then gently fold in the buttermilk and egg mixture
- Tip the combined mixture onto a floured tabletop, and kneed lightly to combine and bind, adding more flour if the mixture feels too sticky
- Transfer the dough to your pan of choice, and with a knife, score an X into the top of the dough
- Bake for around 45 minutes, until the top is golden brown and your hear a ‘hollow’ sound when you knock the bottom of the loaf
- Serve warm with New Canaan Farms Brazos River Blackberry Jam. Delicious!
