Ingredients
1 red and 1 yellow pepper, diced
1lb of ground turkey or chicken
2 cups leftover rice – can also substitute
1 cup frozen or canned corn
1 cup New Canaan Farms Fire Roasted Cantina Salsa
A small amount of water, as needed
Optional add-ins: canned black beans, spices, other frozen vegetables
Serve with
Steamed vegetables or a green salad
Directions
- Heat oil in a skillet over medium heat then add the peppers and turkey or chicken, breaking down into small pieces and stirring so it browns evenly
- After 5-7 minutes, add in the rice, corn and salsa
- Bring to a gentle simmer and cook for around 5 more minutes until the turkey or chicken is completely cooked and the mixture is piping hot, adding a small amount of water if needed
- Serve with fresh vegetables or salad
