Ingredients
- 1½ cups all purpose flour
- ¼ cup brown sugar
- 1 tsp baking soda
- 2 large eggs
- 2-3 mashed ripe bananas
- ¼ cup plain Greek yogurt
- 1 tsp vanilla extract
- ½ cup New Canaan Farms East Texas Blueberry Jam
- For the crumble topping: 2 tbsp white sugar, 2½ tbsp flour, 1 tbsp softened butter
SERVE WITH:
A glass of milk or a hot cup of tea
Directions
- Preheat the oven to 350° and oil a regular sized loaf pan
- Mix together your dry ingredients in a large bowl: flour, sugar and baking powder
- In a smaller bowl, combine the mashed bananas and eggs, then stir in the yogurt and vanilla. Mix until fully combined
- Create a well in your dry ingredients and pour in the wet mixture, then stir to mix well. Your batter will be thick!
- Spoon two thirds of the batter into your loaf pan
- Warm up your jam (15-20 seconds in the microwave will work), then gently spoon it on top of the batter
- Cover with the remaining batter – don’t worry if some jam is still visible
- For the crumble topping, simply combine the sugar, flour and butter, then use your fingertips to gently combine into soft breadcrumbs
- Scatter evenly on the top of the batter
- Bake for about 40 mins until a toothpick inserted comes out clean
- Run a knife around the edge of the pan to loosen any jam residue, then leave to cool for a while in the pan before removing
- Serve with a cold glass of milk, coffee or tea. Yum!
