Ingredients
- 1¼ cups all purpose flour
- ½ cup brown sugar
- 1 tsp baking soda
- 1 tsp baking soda
- Pinch of salt
- 1 large egg
- 1/3 cup olive oil
- ½ cup plain Greek yogurt
- 1 tsp vanilla extract
- ½ jar New Canaan Farms Apple Butter
- 1 cup raisins or dried cranberries (optional)
- Muffin cups
- Powdered sugar, for dusting
SERVE WITH:
A glass of milk or a hot cup of tea
Directions
- Preheat the oven to 350°
- Mix together your dry ingredients in a large bowl: flour, sugar, baking powder, baking soda and salt
- Create a well in your dry ingredients and crack the egg into its center. Add in the oil, Country Apple Butter, yogurt and vanilla and blend thoroughly with a fork
- Gently combine the raisins or cranberries if using
- Place your muffin cups into a muffin pan, and spoon the batter into the cups until about two thirds full
- Bake in the oven for about 15 mins; remove when a muffin springs back to a finger press
- Remove and allow to cool slightly before sprinkling with powdered sugar to serve.
- Perfect served warm for an after-school treat or an on-the-go breakfast!
