Ingredients
4 cups old fashioned oats
1 cup mixed unsalted seeds; I use a combination of sunflower and pumpkin
1 cup mixed nut pieces; pecan, walnut, and/or slivered almonds
¾ cup canola, avocado or melted coconut oil
¼ cup water
¼ cup agave nectar
2 tbsp maple syrup
1½ cups mixed dried fruit (unsweetened cranberries, raisins, sultanas, chopped dates)
Serve with
New Canaan Farms Country Apple Butter
Directions
- Preheat the oven to 280° and line two baking trays with parchment paper.
- Mix together the oats, seeds and nuts in a large bowl.
- Combine the oil, water, agave nectar and maple syrup and warm in the microwave for about 40 seconds. Stir well to combine, then pour into the oat mixture and stir through, until everything is moist.
- Spread the mixture evenly across both baking trays, so it is in a single layer.
- Bake for 35-40 minutes, turning the mixture over mid-way through, and watching out for the lovely golden brown moment!
- When the mixture looks golden and toasty, remove from the oven and put the mixture back in the same large bowl to cool for 10-15 minutes.
- Stir through the mixed dried fruit and serve warm or cold with Greek yogurt and our fabulous Country Apple Butter – the perfect combination!
- Eat every day for breakfast or as a healthy and super-satisfying snack!
