Ingredients
1 sheet puff pastry, thawed
1 cup freshly sliced or defrosted peach slices
1 jar New Canaan Farms Peach Pecan & Amaretto Jam
¼ cup brown sugar
½ cup halved pecans
1 beaten egg, for basting
Powdered sugar for dusting (optional)
Serve with
Vanilla Ice Cream or whipped heavy cream
Directions
- Preheat the oven to 350° and line a baking tray with parchment paper.
- Sprinkle your countertop with a little flour and roll out the puff pastry. Place the pastry onto the baking sheet, then spread a thin layer of New Canaan Farms Peach Pecan & Amaretto Jam on the center section of the pastry.
- With a sharp knife, carve the remaining two sides of the pastry into diagonal strips.
- Spoon a cup of Peach Pecan & Amaretto Jam into a saucepan and add in the peaches, pecans and brown sugar. Heat and gently simmer for a couple of minutes, stirring regularly, until the mixture caramelizes slightly. Allow to cool for 5 minutes then spoon onto the central pastry section.
- Fold in the ends of the pastry and weave the strips across each other, tucking everything in at both ends so the peach mixture is secure.
- Baste with the beaten egg then pop in the oven and bake for 20-25 mins, until the pastry is puffed and golden brown.
- Allow to cool slightly, then plate and serve with vanilla ice cream
