Ingredients
12 eggs
½ cup New Canaan Farms Habanero Salsa
3 scallions, chopped
1 cup fresh baby spinach, chopped
1 red pepper, diced
½ tsp cumin (optional)
½ tsp salt, and a pinch of black pepper
½ cup crumbled feta (or goats cheese)
Serve with
Steamed vegetables or a green salad
Directions
- Preheat oven to 350°, and oil a mini muffin pan (a silicone pan works great here if you have one)
- Whisk together the eggs, then add in the peppers, scallions, salsa, chopped spinach and feta (or goat’s cheese). Add in seasonings to taste
- Ladle the egg mixture into the muffin cups, leaving a gap before the rim
- Bake in the oven for 20-25 mins, until the eggs are puffy and set
- Remove and let cool for a few minutes, then run a sharp knife around the edges of each muffin before removing
- Serve with snacking vegetables for a truly healthy breakfast or snack
