Ingredients
1 cup New Canaan Farms Pumpkin Butter
1 cup pumpkin purée
¾ cup vegetable oil or melted butter
½ cup maple syrup
3 eggs
1 tbsp vanilla extract
3 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
pinch of salt
I 8oz pkg cream cheese, softened
¼ cup brown sugar (optional)
SERVE WITH:
Hot Apple Cider, a warm cup of tea or a glass of cold milk


Directions
- Preheat the oven to 350° F and find the muffin cups
- In a large mixing bowl, stir together the pumpkin butter, pumpkin, butter or oil, maple syrup, eggs, and vanilla until well combined.
- Mix together all of the dry ingredients in a separate bowl, then gently stir into the wet mixture
- Spoon 2/3 of the mixture into the muffin cups, dot over ½ tsp of the cream cheese, then top with the remaining batter (it’s fine if some of the cream cheese is still visible)
- Sprinkle over the brown sugar (optional)
- Bake in the oven for around 25 mins, until the muffins are golden, risen and springy
