Ingredients
1 tbsp olive oil
2 cups shredded, cooked chicken
1 10oz can cream of chicken soup, concentrated
1 cup chicken broth
1 jar New Canaan Farms Verde Chili Salsa
1 15oz can sweetcorn, drained
1 15oz can black beans
Tortilla strips, fresh cilantro and shredded Mexican cheese, to garnish
Serve with
Sour cream, tortilla chips, warm tortillas
Directions
- Combine all the ingredients in a large saucepan and simmer over a medium heat until the chicken is heated through
- Top with Mexican or cheddar cheese and some sprinkles of cilantro. A dollop of sour cream, sliced avocados and cherry tomatoes are some more fabulous additions!
